This single varietal produced an oil with a total polyphenol count of 1,799mg/kg (NMR testing method), with an even higher count of the powerful antioxidant, Oleocanthal, of 1496 mg/kg. This Single Varietal Kalamon has a deep Green color, aromas of olive leaf, fresh cut grass, bitter almond, with hints of green apple. Very intense and complex robust flavor, strong black pepper notes with walnut. Very peppery, balanced bitterness with a persistent spicy finish
